1 ½ cup all purpose flour
⅓ cup melted butter or margarine, softened
1 ½ teaspoon baking powder
2 teaspoon grated lemon rind
1 teaspoon salt
1 cup sugar
½ cup chopped pecans
1/2 cup milk
2 eggs
¼ cup lemon juice
⅓ cup sugar

Directions:

Preheat oven: 350º

Mix together the flour, baking powder and salt. Stir in pecans. In a seperate large bowl at medium speed beat butter, lemon rind, eggs and 1 cup sugar for about 2 minutes. Reduce speed to low and beat in dry ingredients alternating with milk until blended. Pour into 9"x5"x3" loaf pan.

Bake 50-55 minutes or until toothpick comes out clean. Cool 10 minutes.

Meanwhile: stir together the lemon juice and ⅓ cup sugar. Pour over cooled loaf. Cool then remove from pan. Wrap in foal and let stand overnight.
