6 medium potatoes (thinly sliced)
3 T butter
3 T all-purpose flour
1 t. salt
½ t. ground pepper
2 c. milk
1 c. grated cheese
1 T chopped onion

Directions:
Directions:
Slice potatoes thin - a mandolin works best so they are thinly & uniformly sliced.

Start sauce by melting butter over low heat & gradually adding in the flour, then salt & pepper. Stir constantly to create a roux. Gradually add in the milk & bring to a boil. Cook for 2 minutes or until thickened. Remove from heat & add in cheese. Stir until melted.

Layer the potatoes in a cast iron skiller. Once the bottom of the skillet is covered with potatoes, layer with the sauce & onions. Repeat with remaining potatoes & sauce until all are finished. Try to ensure that all the potatoes touch the sauce.

Smoke the potatoes for 20 minutes. Remove potatoes from the smoker & cover with foil. Bake in the oven for one hour at 350 degrees. (You can also do this step in a smoker if you can control the temperature.) Remove the foil after an hour and continue to cook for another 25 minutes or until the potatoes are fork tender. Sprinkle with parsley and let cool a bit before serving.
