1 c. Long-grain white rice, washed & drained
½ c. green enchilada sauce
1 c. red enchilada sauce
1 can black beans
¾ c. corn
1 c. chopped bell peppers
¼ c. chaped jalapenos
¾ c. chopped onion
1 t. garlic
1 T oil
1 cup grated cheese
2 t. taco seasoning
salt to taste
1 c. water
Avocado, cilantro & lime for toppings

Turn on saute button on Instant Pot. Add oil first, then add onion, bell peppers & garlic & simmer for 1 minute - you dont want them browned. Add water to the pot. Scrape bottom with wooden spoon to make sure there's nothing stuck then add all remaining ingredients except the cheese & toppings. Do not stir but press slightly so that the rice is under the liquid.

Close the pot with its lid & press manual/pressure cook button & cook on high pressure for 5 minutes, with the pressure valve in the sealed position. Let the pressure release naturally for 5 minutes then release remaining pressure.

Open the pot & add in the cheese then close with lid for a couple of minutes for the cheese to melt. Stir in the melted cheese with the rice mixture. Top with whichever toppings you like best. Can be served with tortilla chips & lime wedges. Yum!
