2 cups flour
1/2 cup butter
1/2 tsp salt
1 egg, slightly beaten
1/4 to 1/2 cup cold water
1 1/2 quarts tart apples, diced
3/4 cup sugar
1/2 tsp cinnamon
3/4 to 1 cup butter, melted

Directions:
Directions:
Combine flour, 1/2 cup cold butter and salt. Pulse in food processor. Place on board and shape into a mound. Make a small hole in the middle and add the egg. Work one egg with just enough water to form a ball that comes off the board clean. Cover and let stand 30 minutes. Meanwile pare, core and dice apples and mix with cinnamon and sugar. Roll dough on well floured cloth stretching until it becomes paper thin but does not tear. Brush with some of the melted butter and spread apples over dough. Dot apples with a few slices of cold butter. Fold in the sides of the dough. Roll like a jelly roll by lifting the edges of the cloth. Press edges together. Place on baking sheet. Bake in 400 degree oven for 45-50 minutes or until browned. Brush top with melted butter several times during baking.
