3 T EVOO plus extra to finish
1 lg onion chopped
1-2 leeks thin slice
1 bay leaf
Few sprigs thyme and oregano
2 garlic cloves minced
1 T smoked paprika
Pinch of chile flakes
1 c dry white wine
2-3 c cooked black beans
1 c bean broth
3-4 c chicken or veg stock
S & P
Small bunch Tuscan kale chopped
3/4 c shredded smoked ham
2 t sherry vinegar or RG pineapple vinegar

Directions:
Directions:
Lg pot heat oil and cook onion and leek about 10 min.
Add herbs and garlic and spices and cook 1-2 min. Add wine, raise heat and reduce about half.
Add beans, ham, broth and stock and bring to boil. Then reduce heat and simmer uncovered 20-30 min until thickened. Salt and pepper to taste.
Add kale, cover and cook 5-10 min to wilt. Add vinegar. Serve with drizzle EVOO
