1 1/4 cups peeled, chopped tart apples
1/4 cup brown sugar
1 tsp. cinnamon
1 1/2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 cup granulated sugar
1/3 cup butter softened
2 eggs, lightly beaten
1/2 cup milk
1 tsp. vanilla
sour cream icing - optional

preheat oven to 350ºF. Grease an 8x4" loaf pan. In a medium bowl combine apple, brown sugar and cinnamon. In another bowl combine flour, baking powder and salt. In mixing bowl, beat butter and sugar until combined then add eggs and vanilla. alternately, add flour mixture and milk until combined. Pour 1/2 the batter in the loaf pan, 1/2 apple mixture, the rest of the batter then top with remaining apples. Bake about 1 hour or until a toothpick comes out clean. Cool and remove from pan. Drizzle with sour cream mixture if desired.

Sour cream icing: 3 Tbsp. sour cream, 1/2 tsp vanilla, 3/4 powdered sugar. stir until smooth.
