1 1/2 cup fresh or frozen sweet cherries chopped
3 cups flour
1 Tbsp. baking powder
1 tsp. salt
2 eggs, lightly beaten
2 1/2 cups shredded zucchini
2 cups granulated sugar
1 cup vegetable oil
1 tsp. almond extract
1 cup chopped pecans
1/2 cup powdered sugar
1-2 Tbsp. cherry juice

Squeeze fresh cherries or thaw frozen to get 2 Tbsp. of juice. Preheat oven to 350ºF and lightly grease 2 8x4" bread pans. Line each is a wide strip of parchment paper and spray with vegetable oil. In a large bowl, stir together flour, baking powder and salt. Make a well in the center. In a medium bowl combine eggs, zucchini, granulated sugar, 3/4 tsp. almond extract. Add all at once to flour mixture. Stir just until moistened and batter should be lumpy. Fold in pecans and cherries. Pour into prepared pans spreading evenly. Bake 50-55 minutes. Cool for 10 minutes and lift out of pans.

Glaze: 1 Tbsp. cherry juice, 1/2 cup powdered sugar, 1/4 tsp. almond extract. Whisk together and drizzle over cooled bread.
