Ingredients: 4 cups flour 1-1/2 tsp baking soda 1 tbsp salt 2 cups buttermilk 1 egg 1 cup grated cheddar cheese 1/2 cup fresh herbs, chopped (I used parsley, thyme, sage but also consider chives or basil)

Directions:Preheat oven to 360º.
Line a cast iron pan with parchment paper. In a large bowl, whisk together the dry ingredients. Whisk an egg into the buttermilk and pour into the dry ingredients. Mix the dough until it just starts to come together. It will be lumpy. Add the cheese and herbs. Continue mixing until the dough comes together. The dough will be sticky and shaggy looking - don't overmix. Transfer dough to the prepared pan and score a cross on top with a sharp knife. Bake 35 to 45 minutes or until a skewer comes out clean. Cool 10 to 15 minutes. |
