4-6 boneless skinless chicken thighs-cubed
(Chicken breasts work as well)
Olive oil
Salt and Pepper
Half an onion- chopped
8-10 mushrooms- sliced
Red pepper flakes
2 Tbsp flour
1 cup chicken broth
1 can diced tomatoes
2 Tbsp tomato paste
3 bay leaves
1 tsp thyme
1 tsp oregano
1 red bell pepper- chopped
Chunk of Parmesan rind (¼ cup of shredded Parmesan works as well)

In a Dutch oven or large pot heat a drizzle of olive oil, add chicken and sprinkle with salt and pepper. Once chicken is browned remove from pot and put aside. Add another drizzle of oil then cook onions, and mushrooms, once they are tender add the garlic and pepper flakes to taste, add the flour and stir to cover all the vegetables with it.Add in remaining ingredients and return the chicken to the pot. Simmer 20-30 minutes stirring occasionally. Once ready to serve remove bay leaves and rind and serve over spaghetti.
