4 medium russet potatoes, scrubbed
¾ cup ricotta cheese
½ cup plain yogurt
4 scallions, finely chopped

Directions:
Preheat oven to 375 degrees. Place potatoes on a baling sheet. Prick top of each potato several times with a fork. Bake until fork tender, about 45 minutes. Remove from oven and cool 10 minutes.
Using serrated knife, cut of top one quarter of each potato, slicing lengthwise. Use a spoon to scoop flesh into a medium mixing bowl, leaving about ¼ inch border all around. Set shells aside. Mash flesh with a fork until smooth. Add remaining ingredients and stir until combined. Refill shells with potato mixture. Cook util potato is soft and filling is lightly browned, 35 to 40 minutes.
