2 sticks butter or margarine
1 8-ounce cream cheese
2 ½- 3 cups flour
Apricot filling
1 egg white
½ cup sugar
2 cups shredded coconut
1 tsp vanilla

Directions:
Directions:
Cream together butter and cream cheese. Mix in flour to form stiff dough. Chill 2 hours.

Roll out dough and cut to fit small muffin tins. Put ½ tsp apricot filling in each dough cup. Preheat oven to 350 degrees.

Beat together egg white, sugar and vanilla. Stir in coconut. Spoon mixture over apricot filling in cups. Bake 25 minutes.
