½ oz butter
2 cucumbers
12 – 15 stalks mint
½ pint chicken stock
1 rounded tablespoon plain flour
½ pint milk
10 fl oz sour cream
1 small onion
Salt & Pepper

Directions:
Directions:
• Cut off 2 inches of cucumber for garnish
• Pell both cucumbers leaving a little skin between each cut to give a good colour
• Cut in half lengthwise and remove seeds.
• Chop the flesh coarsely
• Strip mint from talks. Wash and chop roughly. ( Should be enough to fill ½ pint measure)
• Melt the butter
• Saute the onion until soft
• Add cucumber, mint, and chicken stock. Mix well
• Bring to boil. Cover and simmer for 20 minutes.
• Blend flour with milk.
• Add to stock and bring back to boil
• Liquidise.
• Cool
• Check taste,
• Add cream and serve
