3 cups all purpose gluten free flour blend
1 1/2 tsp xanthan gum only if flour does not include xanthan gum
1/8 tsp baking powder ( already adjusted for altitude) 1/2 a tsp for sea level
1 tsp kosher salt
12 tbsp butter
1 cup sour cream
Ice water by the teaspoonful as needed.

1. In a large bowl mix flour, xanthan gum, baking powder and salt, combine well.

2. Add the chopped and chilled butter, toss to coat it in the dry ingredients

3. Flatten each chunk of butter between your thumb and fore finger. Until they are smaller flakes. Don't over do you want some medium flakes

4 Add the sour cream and mix. Dough should be shaggy and somewhat crumbly

3. Kneead the dough together with clean hands until it begins to come together. Add ice water by the tsp only if necessary for the dough to hold together.

4. Place dough in plastic wrap. Dough will seem rough but that is ok. Flatten into a disk and put in fridge. Chill for 30 min.

5. Pre heat oven to 375º. Grease a 9 in metal pie plate generously and set aside.

6. Once dough has chilled. Turn onto a lightly floured piece of parchment paper. Sprinkle the dough lightly with more flour and roll out into a rectangle that is about 1 inch thick, moving the dough frequently and sprinkling it lightly with flour if it begins to stick.

7. Fold the dough over on itself in thirds like you would a business letter. Sprinkle the dough again lightly with flour and roll out the dough once again into about 1in think. Repeat 2 more times.

8. Cut dough into two. Roll each out into 12 inch round.

9. Proceed with pie recipe of your choice

** you can blind bake for crispier crust.
