1 tbsp olive oil
1 onion, chopped
1-2 cloves garlic, minced
1 tsp cumin
salt to taste
1 cup vegetable broth
2 cans black beans, rinsed and drained
1 can coconut milk
1 bunch cilantro, chopped
juice of 1 lime

Directions:
Directions:
Heat oil in a large or pot.
Sauté onion for 3-4 minutes.
Add garlic and cook for an additional minute.
Add beans, vegetable broth, and coconut milk and blend with stick blender.
Bring to a simmer and cook for 10-15 minutes.
Garnish with cilantro and lime juice.
