3 large eggs and 1 egg white (room temp)1/2 cup (115 grams) divided
1/2 teaspoon vanilla extract
1 cup (140 grams) all-purpose flour
pinch of salt
icing sugar for dusting (optional)

Preheat oven to 375º F
Line two cookie sheets with parchment paper
Separate eggs placing the yolks in a large bowl and the whites in the stand mixer
Add 1/4 cup white sugar to the yolks and beat until pale, light, and fluffy using a hand mixer or a large whisk
Whip the egg white on medium to high speed until fluffy. add the other 1/4 cup of sugar in a slow steady stream while whipping. Continue to whip until the whites hold stiff peaks.
Using a large metal spoon gently fold the egg whites into the whipped egg yolks.
Once almost combined sift the flour and salt over the batter.
Gently fold until the flour is incorporated.
Place the batter in a piping bag and pipe the batter in 3-31/2 inch long lines about 1 inch apart.
Bake for 15 minutes or until the cookies are just beginning to turn brown around the edges. Sprinkle with icing sugar if desired. Cool completely before storing.
