2 T olive oil
1 large onion, finely chopped
2 green peppers, finely diced
4 medium potatoes, diced
salt
pepper
10 eggs
1 cup cheddar cheese

Directions:
Directions:
Saute onions, peppers and potaotes until tender. Place in casserole. Beat eggs with salt and pepper. Cover vegetables. Refridgerate overnight. In the morning, sprinkle with cheese. Bake at 350 degrees 35-40 minutes.
