4-6 day old croissants
1 pound Italian sausage
1/2 cup chopped onion
2 cups fresh spinach
2 cups grated cheese
12 large eggs
1 1/2 cup half and half
1 tsp dried mustared
1 tsp salt
1 tsp pepper

Directions:
Directions:
Spray 13 x 9 inch pan. Tear croissants and layer in pan. Brown sausage. Drain and distribute over croissant layer. Saute onion 5 minutes. Add spinach and saute a few minutes. Pour vegetables over sausage. Stir together remaining ingredients. Pour over vegetable layer. Cover and refrigerate overnight. The next morning bake at 375 degrees for 30 minutes, covered. Remove foil and bake 30 minutes more.
