1 1/2 cup flour
3/4 cup brown sugar
1 cup butter, softened
1 1/2 cup oatmeal
1 egg
1 tsp baking powder
1 jar apricot filling or filling made with 4 ounces dried apricots (see below)

Directions:
Preheat oven oto 350 degrees. Grease a 13 x9 inch pan. Combine flour and baking powder. Cut in butter until resembles crumbs. Add egg. Mix in oatmeal. Divide dough in half. Pat half in pan. Spread filling over. Sprinkle remaining dough over.

Bake 25-30 minutes or until lightly brown. Cut into bars.

Apricot filling; in small saucepan, cover dried apricots with water. Simmer until soft add 1/3 cup sugar. Simmer another minute or two to dissolve sugar. Add 1/2 tsp corn starch. Puree in foold processor. Cool.
