1 cup butter (room temp)
1 cup powdered sugar, divided
1 tsp vanilla extract
1 1/2 cups flour
2 tsp cinnamon, divided
1/4 tsp salt

Directions:
Preheat the oven to 350º F.

Lightly grease a cookie sheet or use parchment paper.
Beat together 1/2 cup powdered sugar and butter in a bowl until well combined. Add vanilla.
In a bowl, sift the flour, 1/2 tsp cinnamon and salt.
Add the flour mixture to the butter mixture and mix until a stiff dough forms.
Take tsps of the dough and shape into 1" balls.

In a shallow bowl, combine the remaining powdered sugar and cinnamon and coat the cookies.

Bake the cookies for 15-20 mins until golden brown.

Once cookies are cooled, recoat the cookies with the remaining cinnamon sugar mix.

Made these for the first time for a Cinco de Mayo luncheon at the office. Needless to say, they were a huge hit!
