2 8- to 10-oz. skinless, boneless chicken breast halves, halved horizontally.
2 Tbsp. extra virgin olive oil
½ cup crème fraiche
¼ cup chopped basil leaves.
1 Tbsp. Dijon-style mustard
2 Tbsp. lemon juice
1 seedless cucumber thinly sliced.
8 radishes very thinly sliced.
2 oz. radish or broccoli sprouts, washed.

1) Place each chicken piece between two pieces of plastic wrap; lightly pound to an even thickness. Season the chicken on both sides with kosher salt and black pepper.
2) In a large heavy skillet, heat 1 Tbsp. of the oil over medium-high heat. Add chicken and cook it for three minutes or until browned. Turn; cook for two to three minutes more or until done (165° F).
3) Meanwhile, for basil sauce, in a bowl stir together crème fraiche, basil, and mustard. For the cucumber-Radish Salad, in a medium bowl whisk together lemon juice and the remaining 1 Tbsp. oil, and a pinch of kosher salt. Add cucumber, radishes, and sprouts, and toss to coat. Serve chicken with basil sauce and Cucumber-Radish Salad.
