2 navel oranges, halved.
2 limes, juiced (¼ cup)
3 Tbsp. tamari or soy sauce
1 Tbsp. grated fresh ginger.
4 tsp. vegetable oil
12 green onions, trimmed.
1 lb. boneless salmon fillet (skin on)

Directions:
Directions:
1) Preheat the oven to 475° F. Juice one orange to get 1/3 cup of juice. Cut the remaining orange into wedges.
2) In a small bowl, stir together orange juice, lime juice, tamari, ginger, and 2 tsp. of oil. Drizzle the bottom of a 3-quart au gratin dish with the remaining 2 tsp. oil. Place the green onions in orange wedges in the dish; toss to coat. place the salmon, skin side down, in the center of the dish. Drizzle the salmon with the orange juice mixture.
3) Bake for 15 minutes or until the salmon is opaque and starting to flake. Remove and turn oven to broil. Baste the salmon with the sauce. Broil 4 to 5 inches from heat for five to 7 minutes or until the fish flakes easily with a fork and the onions are beginning to brown, turning onions once or twice. It makes 4 servings.

Hint:
When you buy fresh salmon, there are a few things to look for. The skin should be bright a metallic, the flesh firm and vivid. Avoid fillets with visible tears or separation in the muscle tissue, always smell the fish. It should smell clean and briny like the ocean - never fishy!
