10 flour tortillas
2 cups Monterey Jack cheese
2 cups cooked, shredded chicken
3 tbsp butter
3 tbsp flour
2 cups chicken broth
1 cup sour cream
4 oz diced green chilies
diced tomatoes
corn

Directions:
Directions:
Preheat oven to 350º. Grease 9/13 pan. Mix chicken, tomatoes, corn and 1 cup of cheese. Rollup in tortillas and place in pan. In sauce pan, melt butter and stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly. Stir in sour cream and chilies – do not boil! Pour over enchiladas and top with remaining cheese. Bake 22 minutes and then broil on high to brown the cheese.
