Divinity Fudge Recipe

2 1/3 c sugar
2/3 c white syrup
1/2 c water
2 egg whites
1/4 tsp. salt
3/4 c chopped nuts
1 tsp. vanilla

Directions:
Directions:
Separate eggs and place the whites in a large bowl.
Chop nuts
Butter 2 cookie sheets
Combine sugar, syrup and water in a sauce pan.
Stir and cook over low heat until sugar is dissolved.
Cover and cook 1 minute then uncover and cook to brittle stage 265 degrees
Beat egg whites until stiff and pour in the syrup.
Beat until thick. Shape by spoonful's into small balls.

When I was in the Army, mother would send packages to me with Divinity Fudge, Quick Nut Fudge and Chocolate Chip Cookies. The cookies would always break up during the trip (did not hurt the taste at all!) but the two fudges held up perfectly! I can't tell you what a treat it was to receive these packages! I always shared them with my fellow soldiers, many of whom were never lucky enough to get treats from home.

I must note, however, that packages received (at least in the units I was assigned to) resulted in the recipient having to do push-ups, usually 50 per package. Always well worth it though!!
