3-4 unbaked pie crusts
2 pounds ricotta cheese
6 eggs
8 ounces mozzarella cheese (grated or small cubes)
1 pound cooked ham chopped
1/2 pound Genoa salami chopped
1/4 pound prosciutto chopped
1/4 cup grated Parmesan cheese
1/4 cup parsley chopped
1 tsp pepper

Directions:

Preheat oven to 325 degrees
Place ricotta in a large bowl and add eggs one at a time on low speed. Stir in mozzarella, ham, salami, prosciutto parmesan and parsley until all ingredients are well combined.
This can they be placed in either two 9" pie pans or one spring form pan. Cover with other pie crust and vent top.
Bake in preheated oven for 1 hour for pie pans and up to 30m mins longer for spring form. A knife inserted should come out mostly clean and crust should be golden brown. Cool on racks.
