2 C sugar
1 3/4 C all purpose flour
3/4 C unsweetened cocoa powder
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp kosher salt
1 C milk
1 3/4 sticks unsalted softened butter
1 C chocolate chips if desired
2 eggs
2 tsp vanilla extract
3/4 C boiling water

Directions:
Preheat oven to 350°. Grease bottoms of 2 8-9” round cake pans, or line for 24 cupcakes.
In a large mixing bowl, combine dry ingredients. Add milk and butter, and beat on medium speed for two minutes. Add the eggs and vanilla extract. Stir in boiling water. Stir and chocolate chips if desired.
Divide batter evenly between two cake pans or cupcake liners. Bake cake for 30-45 minutes, or cupcakes for 20-25 minutes until toothpick comes out clean.
Cool on wire rack 10-15 minutes. Remove cake from pan and cool completely on wire rack.
Frost when cooled.
