2 C unsalted butter
1 C sugar
1 C brown sugar
2 large eggs
2 tsp vanilla
2 1/2 C rolled oats, quick cooking or old fashioned
2 C all purpose flour
1 tsp baking powder
1 tsp baking soda
3/4 tsp salt
2 2/3 C chocolate chips
1/2 - 1 C chopped nuts

Preheat oven to 375°. Lightly grease two baking sheets. Beat together butter and sugars, then beet and eggs and vanilla. Grind oats in a blender or food processor saucer until it course powder. Add to the sugar mixer with flour, baking powder, baking soda, salt, chips, and nuts. Mixed just until thoroughly combined. Dropped out by tablespoonfuls onto the prepared baking sheet. Leave about one and a half inch between each ball of though. The cookies will spread. Bake cookies for 1415 minutes or until lightly browned. Remove from oven and cool. Enjoy!
