2 C all-purpose flour
2 tsp salt
3/4 C shortening
4-10 T cold water (depends on humidity)

Mix flour and salt. Cut in shortening. Gently stir in enough water with fork until dough just holds together. DONT OVER MIX, that can make the dough tough.
Divide dough into two portions and shape gently into two disk shapes. AGAIN, don’t overwork as it can make the crust tough. If you have the time, wrap in plastic wrap, and chill for 30 minutes. I generally do not.
Roll out each disk on a floured surface, at least 2”larger than the pie plate you will use. use the second desk for another pie, or a top crust. Fill and bake according to recipe directions.
