8 Tablespoons (1 stick) salted butter
One 28-32 ounce bag frozen shredded hash brown potatoes
1 medium onion, finely diced
1/4 cups all-purpose flour
1 cup milk
2 cups low-sodium chicken broth
Kosher salt and freshly ground black pepper
1-1/2 cups grated Monterey Jack cheese
1 cup sour cream
1/2 cup grated sharp cheddar cheese
2 cups kettle-cooked potato chips
1/4 cup grated parmesan

Preheat the oven to 350º. Grease a 9x13" baking dish with a tablespoon of butter.

Heat a large deep skillet on medium-high and melt 6 Tablespoons of butter. Add the onions and cook until softened about 3-4 minutes. Sprinkle the flour over the onions stir to incorporate. Cook about 1-2 minutes. Whisk in the milk making sure to get all the lumps out. Add the broth and whisk some more bringing the mixture to simmer and to thicken. This will take about 3-4 minutes. Season with salt and pepper.

Turn off the heat and add the Monterey Jack Cheese, sour cream and Cheddar cheese. Add the hash browns and stir it all together. Transfer to the baking dish.

Melt the remaining 1 Tablespoon of butter. Put the potato chips and parmesan in a bowl and smash the potato chips. Pour in the melted butter to coat. Sprinkle over the hash brown mixture.

Cover with foil and bake for 20 minutes and then remove the foil and continue to bake for about 18 minutes more. Let rest for 15 minutes before serving.
