1 to 1 1/2 lbs. lean pork roast, cut into 1-2" thin strips.
2-3 pieces bacon

1-2 carrots, peeled and sliced thin
2 stalks celery, sliced thin
1 large onion, 1" chunks
1 green bell pepper, cut in 1 to1/2 " pieces
1 red bell pepper, cut in 1 to1/2" pieces
1 -2 garlic cloves
2 cups chicken boullion
1/2 cup cider vinegar
1/2 cup honey
1 tsp. salt (optional)
2 tbls.soy sauce
2-3 tbls cornstarch
1/4 cup water or boullion
1 can chunk pineapple, drained
cooked white rice

The night before cut up pork, place in a baggie and refrigerate overnight.
Microwave each vegetable until 3/4 done and store individually in baggies overnight.

Next day: Cook bacon and remove bacon , reserve drippings. Lightly brown pork strips in bacon fat, add minced garlic. Remove meat from pan and set aside.

NOTE, Cook enough white rice for desired amount of servings. Set aside. Continue with recipe while rice is cooking.

To the same pan from cooking bacon, add 2 cups boullion, vinegar, honey, salt and soy sauce. Blend cornstarch in water, add to sauce pan. Stir until thickened. Simmer, stir occasionally.

Meanwhile: Add small amount of oil to a large wok or fry pan. Add carrots, celery, onion and peppers to wok. Heat vegetables to desired tenderness, add chunk pineapple and pork. Add sauce, vegetables and meat together. Serve over cooked white rice.

This recipe was an experiment as a result from raising our own honey from our bee hives. We belonged to the El Paso County Bee Association to learn how to raise bees and have our own honey. We borrowed the equipment from them to process our honey. Our wax, also, took a prize for its quality.
