1/4 cup rice vinegar
2 tablespoons sugar
2 tablespoons mirin rice wine
1/2 teaspoon salt

Directions:
Directions:
1. Add all ingredients to pot. Heat on low until sugar and salt are dissolved, stirring constantly. DO NOT LET SIMMER OR BOIL or the vinegar and mirin will lose flavor.
Let it cool.
2. When rice is ready (let rice stand for 30 minutes after washing). Once finished, let it sit again another 30 minutes.
3. Wet the rice paddle and mix rice carefully in rice pot.
4. Sprinkle some rice vinegar in pan/tray and then add rice. Sprinkle vinegar mixture on rice and stir gently to mix together.
5. Fan the rice occasionally while mixing together to make rice glisten.
6. Repeat.
7. Use ALL rice dressing.
8. Let rice cool.
