6 whole heads of garlic, firm and unsprouting
1/3 cup olive oil
Salt and pepper
2 or 3 sprigs thyme, rosemary or sage
Fresh baked French bread, warmed

Directions:
Preheat oven to 300º.

Make an incision around the head of garlic to remove the outer skin from the top half of the head, exposing the top of the individual cloves. Arrange in a baking dish that will just hold them. Pour the olive oil over the top. Add salt, pepper and herbs.

Bake, covered for one hour. Take off the cover and feel the garlic. If squishy soft, remove from the oven. If it still keeps shape when pinched, spoon oil over the top and continue baking for other 20 to 30 minutes. The garlic will be very tender and sweet.

To use, squeeze garlic from the peels. Spread onto deliciously warm French bread.
