1 cup ice water
1 egg
1/4 tsp baking soda
1/4 tsp salt
4 boneless chicken breasts, cut into cubes
vegetable oil
4 TB cornstarch
3 TB water or Orange juice
1 cup sugar
1/2 cup ketchup
1/2 cup white vinegar
1/2 cup water
1/2 cup orange marmalade
1/2 cup pineapple chunks
2 tsp soy sauce
1+1/2 tsp minced fresh ginger.
1 tsp minced garlic
1/4 tsp red pepper flakes


Directions:

Whisk together, ice water and egg. Add baking soda & salt. Add 1 cup of flour & mix well.

Cover chicken chunks with 1 cup of flour then cover with egg misture.

Shake off excess batter then drop into hot oil & fry for 3 to 4 minutes, until golden brown & meat is cooked.

In separate small bowl mix cornstarch & orange juice. Set aside

In medium bowl, mix all the remaining ingredients then put into a saucepan & bring to a boil stirring constantly. Add cornstarch mix & stir until it thickens.

Pour sauce over cooked chicken, stir until coated & serve immediately
