4 T. flour
4/5 T. butter (or oil)
2 C. milk
Salt/pepper
(I put a tsp. of sugar in this at milk time but don’t tell anybody)

Cook the flour in the butter just until it starts to turn brown. Add milk and simmer until thickened.

This is a béchamel (bay sha mel) sauce.

Add a pound of browned ground beef or breakfast sausage to this and you have SOS, or Stuff on a Shingle (something like that). The shingle being a biscuit, a slice of French bread or a baked potato and you have a full meal!
