3 c all-purpose flour
⅔ c Butter
½ tsp Salt
1 tbsp w. sugar
4 tsp baking powder
1 tsp b soda
2 c buttermilk

Egg wash
1 egg yolk
2 tbsp coffee cream
1 tbsp cold water

Optional
1tsp Herbs De Provance
Or
½ Saskatoon berries

1.Pre heat oven 425º f 218º c.
Prepare a 12 in x 6 in oven proof baking pan. by placing ⅓ c butter in it and melting it in the oven, remove and allow to stand while prepping the biscuits.

2. Place all dry ingredients into a large mixing bowl, using a box grater, grate in ⅓ c cold butter toss together with a fork, last make a well in the middle of the dry ingredients and fill with buttermilk and quickly pull together.
(if adding optional ingredients, berries or herbs add to the dry ingredients)

3. Work quickly never overwork the dough. On a lightly, floured surface roll out the dough over lapping into 4 layers to approx. 1 in. thick. Using a 2½ biscuit cutter cut out the biscuits and place into the oven baking pan with the melted butter.

4. Prepare egg wash whisk together the egg yolk, water and coffee milk.
using a pastry brush paint the tops off the prepared biscuits.
pop into the pre heated oven and bake for 20 min.

This one was inspired by Bertha. A lovely lady and the best biscuit maker ever!
Bertha gave me a place to live during my stay in Nashville Tennessee, while learning the music business, and gathering knowledge about song writing from the best.
I tried to squeeze the secret recipe out of her but without success.
But after many tries, I feel like I have come up with a recipie of my own, that is pretty close.
