2 salmon steaks (7 to 8 ounces each, about 3/4 inch thick)
3 tablespoons dark brown sugar
4 teaspoons Chinese-style hot mustard or Dijon
1 tablespoon soy sauce
1 teaspoon unseasoned rice vinegar

Brush salmon steaks with oil and grill until medium-rare. Meanwhile, whisk together all other ingredients. Toward end of grilling, baste with sauce.
