2 Large Zucchini, chopped
3 Garlic Cloves
1 Large Potato, peeled and cut into cubes
6 Oz. Mascarpone
Olive Oil
2 Oz. White Wine
4 Cups Vegetable Stock
1 Oz. Fresh Basil, chopped
Himalayan Salt and Ground Black Pepper
Toasted Almonds, roasted and rough chopped

Directions:
Directions:
Coat the bottom of a large stock pot with olive oil and place on high heat
Brown garlic
Add potatoes and cook for 10 minutes
Add zucchini and cook for 5 minutes
Add vegetable stock and bring to a rapid boil
Roast your almonds on a flat baking pan spread out thin for 5 minutes at 350
Remove from oven a let cool
Cut down heat and add mascarpone, basil (hold some back for garnish), salt and pepper to taste
Blend with a stick blender or traditional blender in small batches
Reheat and serve immediately
Chop some of your almonds and garnish plate with chopped basil and almonds
