1 cup shortening or 2 sticks margarine
1 cup sugar
1 egg
2 cups flour
½ teaspoon baking soda
½ teaspoon salt
2 tablespoons white vinegar
1 teaspoon lemon extract
1 ½ teaspoon grated lemon rind

Directions:
Directions:
Preheat oven to 350º

In a separate bowl mix flour, baking soda and salt. Set aside.

Cream shortening with sugar until fluffy. Add egg, lemon extract, grated lemon rind and white vinegar. Mix well. Add flour mixture and mix well.

Drop by teaspoon or tablespoon onto parchment lined cookie sheet. Use fork tines to press down cookie. (It is easiest if you dip the fork tines into a glass of water each time before pressing otherwise the dough will stick into the tines.)
Sprinkle sugar in top if desired.
Bake approximately 10 minutes (will depend on size of cookie) until the edges start to brown.
Let cool.
