Ingredients:  
Large 4-6 lb branzino (striped bass or white fish)
3 lbs fingerling potatoes
2 large onions
3 large tomatoes
1 C evoo
1/2 lb unsalted butter
1 C dry white wine
salt & pepper
fresh sage & thyme

Directions:
Directions:
Chop potatoes, onions & tomatoes, 1 inch size
coat bottom of large oven safe casserole pan with olive oil
arrange onions, potatoes & tomatoes (reserve some) on bottom of pan. salt & Pepper
Lightly cover with olive oil, add butter on top
coat whole fish with butter & layer of vegetables.
add more oil* salt & pepper and 1/2 C wine***
Add fresh herbs
Bake uncovered at 375 for 45 min.
Halfway thru add second 1/2 cup of white wine over fish.
Before serving filet fish
