1 pkg yellow cake mix
4 large instant vanilla pudding
3/4 c. water
4 eggs
3/4 c. oil
2 c. coconut
1 c. chopped walnuts or pecans
Coconut Cream Frosting: (Make 1 1/2 times this.) 4 T. butter
2 c. angel flake coconut
1 pkg (8 oz.) cream cheese
2 T. milk
3 1/2 c. confectioners sugar
1/2 tsp. vanilla

Directions:

Combine cake ingredients. Pour into 3 greased and floured 8 or 9- inch layer pans. Bake at 350º F for 20 minutes. For frosting: Melt 2 T. butter in skillet; add coconut. Stir constantly over low heat until golden brown. Spread coconut on absorbent paper. Cream 2 T. butter with cream cheese. Add milk. Beat in sugar. Blend in vanilla. Stir in coconut. Save 1/4 for topping. Spread on cake.
Press remaining coconut on cake. Let sit overnight in refrigerator before you serve.
