Ingredients: 1 cup of butter (2 sticks) ½ cup granulated sugar 1 cup brown sugar 2 large eggs 2 teaspoons vanilla ½ teaspoon coconut extract (optional) 1 teaspoon baking soda 1 teaspoon salt 2½ cups all-purpose flour 1 cups semi-sweet chocolate chips ⅔ cup milk chocolate chips ⅓ cup bitter/dark chocolate chips 2 cups shredded coconut, toasted 1 cup Macadamia nuts chopped in half and toasted

Directions:Preheat oven to 350º Place parchment paper on two cookie sheets. While oven is heating toast the shredded coconut until slightly brown about 5 minutes on parchment paper. Toast Macadamia nuts until light brown around 5 minutes on the parchment paper. Let cool. In a large bowl beat the 2 sticks butter with the sugars. Add the eggs one at a time and whip until creamy. Add the two flavorings. Add the flour, baking soda and salt to creamy mixture. Dough will be thick. Using a dough hook if you have it add chocolate chips, coconut and Macadamia nuts. Mix well. Shape dough and place on parchment lined cookie sheets. I used a medium sized cookie scoop. Bake for 15-20 (I had to bake 20) minutes depending on oven or light brown. Makes 3 to 3½ dozen cookies. This cookie is delicious and similar to the Arkansas Heart Hospital Royal Cookies. |
