3 oz Parmesan cheese, grated on large holes of box grater (1 cup)
3 cups flour
1 TB baking powder
1/4 tsp cayenne pepper
1 tsp salt
1/8 tsp ground black pepper
4 oz cheddar cheese, shredded or cut into 1/2 inch cubes
1 1/4 cup milk
3 TB unsalted melted butter
1 large egg beaten
3/4 cup sour cream or plain yogurt (whole one. I do not use greek yogurt)

Directions:

Rack in middle position in preheated oven 350F. Spray 9 x 5 inch loas pan with cooking spray. Add 1/2 cup parmesan over the bottom of pan.
In a large bowl, whisk flour, baking powder, cayenne, salt, pepper to combine.
With rubber espátula, mix in the cheddar until is all coated with the flour.
In a médium bowl, whisk together milk, melted butter, egg and your cream (or yougurt).
With spatula, mix wet ingredients into dray until combined.
Do not overmix.
Put in the loaf pan and sprinkle the last 1/2 cup parmesan.
Bake 45-50 min or until golden brown and toothpick inserted in the middle comes out clean.
Cool in a wire rack for 5 min. Invert the loaf into rack and cool for more 45 minutes. Cut into slices and serve.
