1 orange roughy filet
1 tbsp olive oil
1/3 tsp salt
1/2 tsp paprika
1/2 tsp black pepper
pinch of cumin
1/2 tsp thyme (I used lemon thyme)
1/2 teaspoon garlic powder
Juice of 1 orange

Directions:
Directions:
Rinse orange roughy filet in cold water and pat dry with paper towels.
Mix spices in a small bowl and cover the fish entirely.
Heat olive oil in the skillet (it has to be very hot) and place fish in it. Cook for 3 minutes on one side and then for another 3 minutes on another side.
While filet is cooking microwave juice of 1 orange for about 3 minutes to reduce and heat. The sauce will be thin.
Plate on top of rice pilaf and spoon orange sauce over all. Serve with a tossed salad or veggie of your choice.

Do not move fish during cooking otherwise it may stick to the skillet. I made three filets so add the same ingredients times the number of filets.
