1 bag spinach, roughly chopped
8 oz small portobello mushrooms
1/2 cup onion or green onion if you prefer
2 cloves garlic
Salt pepper
Red pepper flakes
Flour tortillas
Mozarella, havarti or cheese of your choice
1/2 stick butter plus butter for tortillas
Olive oil

Directions:
Directions:
Saute mushrooms in half of the butter until golden brown. Season with salt and pepper while cooking. Remove from pan. Add onion, little olive oil and remaining butter. Saute onions. Add garlic and spinach. Season with salt and pepper and as much of the red pepper flakes as you like. Saute until spinach is wilted. Remove from pan. Wipe out pan. Butter one side of a flour tortillas. Cook buttered side down until lightly brown. Remove. Repeat with another tortilla. Remove. On uncooked side of one tortilla, spread mushrooms. Top with spinach then cheese. Return to pan to melt cheese. Quarter and serve.
