1½ tbsp. olive oil
1 large onion, diced
3 large carrots, diced
3 large celery ribs, diced
1 tbsp. chopped garlic
1 tbsp. minced ginger
1 tbsp. ground cumin
1 tbsp. garam masala
2 cups (400 grams) green lentils or brown lentils
6 cups chicken broth
1 cup chopped tomatoes
2 bay leaves
1 tsp salt
Black pepper
1 yam or any potato, cut into chunks

Directions:
Directions:
In a large pot heat olive oil over medium heat.

Add onion, carrots and celery and cook for 5-6 minutes until the onion is soft and translucent.

Add the garlic and spices and cook for one minute, stirring continuously.

Add the remaining ingredients, bring the mixture up to a boil, then turn the heat down to medium low and put the lid on. Simmer for about 30-35 minutes, or until lentils are soft.

Turn the heat off, let it cool slightly, and remove the bay leaves.

Use an immersion blender to blend everything until smooth with a little bit of texture left over.

Serve it warm, with a drizzle of extra virgin olive oil, black pepper, and crusty, buttered bread.
