Ingredients: Soup: 2 tbsps Butter 1 large onion chopped 1 Cup sliced carrot 1 Cup sliced celery 5 Cups chicken broth 1 tsps chicken base 1/2 tsp dried thyme 1/2 tsp salt 1/4 tsp pepper 1 lb precooked chicken
Dumplings: 1 Cup flour 1 tsp baking powder 1/2 Cup milk

Directions:In 4 quart sauce pan heat butter over medium heat. Add onion, carrot and celery and cook stirring until softened. Add broth, salt, pepper and thyme and bring to boil. Simmer while preparing dumplings.
In a medium bowl mix flour, baking powder and milk into soft ball. Roll out on floured surface to about 1/4 inch thick. Cut into one inch squares and drop dumplings into hot soup and cook for about 10 minutes until cooked through.
Add chicken pieces and simmer until hot and soup is slightly thickened. |
