5 lbs pork belly
3 tbs olive oil
1 cup dry rub of your choice

SAUCE:
1 cup BBQ sauce
3 tbsp butter
2 tbsp honey

Directions:
Directions:
Trim skin and fat from back of pork and cut into 2 inch cubes. Place in large bowl, add olive oil and dry rub and mix together. Place wire on smoker rack, smoke uncovered for 3 hours at 230 degrees.

Remove and place in a foil pan and add BBQ sauce, butter, and honey. Cover and place back in smoker and cook for 90 minutes. Remove foil and smoke for another 15 minutes.
