8 Chicken Thighs or Chicken Tenders, cut in to bite size pieces
Season to taste
3 Tbsp. Butter
Olive Oil
3 Garlic cloves, minced
1 cup Chicken Broth
½ c Heavy Cream
¼ c grated Parmesan Cheese
Juice of 1 Lemon
2 c Baby Spinach (stems removed) cut in to small pieces

Directions:
Directions:
Season chicken.
Sear chicken pieces in olive oil, about 2-3 minutes. Set aside.
Melt butter, add garlic and cook.
Stir in chicken broth, heavy cream, parmesan and lemon juice.
Bring to a boil, stir in spinach and simmer until spinach has wilted and the sauce has thickened. Sauce can be made thicker by using flour or cornstarch.
Add chicken and serve over rice.
