1 1/4 cup oil
2 cups sugar
4 eggs
2 cups flour
3 cups finely grated carrots
1 pkg. chopped black walnuts (optional)
1 tsp cinnamon
2 tsp baking soda
1/4 tsp salt

Frosting:

1 cube butter
8oz cream cheese
1 box powdered sugar
Vanilla

Directions:

Beat eggs, add oil and mix. Add sugar and dry ingredients. Bake at 350º for 40 minutes or until done. Let cool.

Mix all frosting ingredients together and frost cake.
