1 c Coconut Oil, melted
3 Eggs
1 ¼ c Sugar
1 teas. Vanilla
3 c Flour
2 teas. Cinnamon
1 teas. Baking Soda
½ teas. Cream Tartar
1 teas. Salt
2 c Zucchini, grated, wet…do not dry it out

½ c Sugar
1 teas. Cinnamon
¼ teas. Cream of Tartar

Directions:
Directions:
Preheat oven 350º. Spray 2 loaf pans with cooking spray of choice.
Beat oil, eggs, sugar and vanilla.
In separate bowl mix together flour, cinnamon, baking soda, cream of tartar and salt.
Add dry mixture into the wet mixture and mix well.
Add zucchini to the batter, mixing well.

In separate bowl, combine cinnamon, sugar and cream of Tartar to create topping.
Divide batter in half between two pans and sprinkle with sugar mixture on top of each loaf.

Bake 45-50 minutes
