4 tablespoons oil
2 medium onions, sliced
2 green peppers, sliced
1 cup mushrooms, sliced
1/8 teaspoon pepper
1 bay leaf
1 teaspoon salt
2 No. 2 cans tomatoes
½ clove garlic, chopped
1/8 teaspoon dried thyme
1 tablespoon chopped parsley
3 pounds cooked shrimp
6 cups cooked rice

Directions:

Heat oil in heavy saucepan. Add sliced onions, green peppers, mushrooms, salt and pepper, and bay leaf. Cover; simmer 5 minutes over low heat. Add tomatoes (solid and juice), garlic, thyme, and parsley. Cover; simmer 30 minutes, stirring every 5 minutes. Add shrimp to sauce. Simmer together at least 15 minutes over low heat. Serve from casserole, with hot steamed rice.
